Bean and cheese aren't always the ingredients you use on Tacos and Burritos. You can use beef, eggs, lettuce, chicken, pork, and a lot of other things as well. I think Sayo is saying that you're partially correct about the bean and cheese part, but that it's not always a lot of those on tacos and burritos.

Mexican Cuisine isn't just restricted to Fajitas, burritos, nachos, quesadilla, tacos. And I can't say much about it because I have little experience eating Mexican cuisine.
Mexican cuisine has as much variety as any other culture. Of course you hardly see a fraction of that variety in lol'Murrikan restaurants. All I can say is I've eaten plenty of different kinds of Mexican foods when I visited my relatives and when they came to visit my family here in the States.
